RECIPE (adapted from The New Best Recipes: reduced sugar amount, leaves out corn syrup in the

caramel). After a few failed attempts, I learned that how you do it is the most important part. I had the same mix of ingredients, but I baked it differently, and the results were markedly different, varying from bad, to mediocre, to tasty. The bad one would have a lot of bubbles and holes. Tips: -water bath is the best way. cover the tray loosely so that steam can escape -brown/cane sugar will not work. Use white sugar only. -this recipe is for 6 ramekins (8-10cm ramekins). 1) Caramel part: 1/3 cup of water, 1/2 cup of sugar (original recipe calls for 1 cup), a bit of lemon juice. Mix all and put on stove on medium high heat. No need to stir. Wait until the liquid turns to the desired color. Put the ramekins in the tray for water bath. Pour the caramel into the ramekins and let it cool for 15 mins. 2) Cream part: 1 1/2 cup whole milk (3.5%), 1 1/2 cup light milk (12%), 1/2 cup of sugar (original recipe calls for 2/3 cup), vanilla extract, a bit of salt, 3 eggs, 2 egg yolks. Boil the milk on medium heat until it reaches 160F. Meanwhile mix the eggs and salt and vanilla, then pour the milk in slowly while stirring constantly. Turn on the oven to 375F (178C). Boil 1.5liter of water. Meanwhile pour in the milk mix into the ramekins. Put the tray with the ramekins in the oven. Fill the tray with hot water until halfway up the sides of the ramekins. Cover the tray LOOSELY with aluminum foil. IMPORTANT: cover loosely so that steam can escape. Wait for 35-40 mins. Savor your result warm, or let it cool and put in the fridge for a cold dessert.
