Due Date: Week 8 (Full Time / Part Time) Percentage of Final Grade: 40 Marks (Group written Report 40%) 1. Assignment Outline & Requirements (Learning Outcomes: 1 - 4)

Based on the selection of one suitable individual report to work on the Group Assignment that is required to follow through this particular restaurant theme and concept. The group assignment will incorporate applying both the design and creative capabilities and theories learned during the course. The scope should include but is not limited to the following topics:

Develop a menu style. Give a general idea as to what type of menu would be most
effective in the selected themed food operation.

Plan the basic services. Using your menu style, briefly describe your service style
and pace at which your servers will perform. (E.g. Placemat vs. white table cloth; white apron vs. casual dress; formal vs. casual; professional vs. relaxed, etc.) Prepare a menu of your choice. Remember to keep your menu attuned to your theme/concept.

Determine how you will price your menu. Discuss the methods you will use for your
calculations. Why have you used these methods? Why would you use different methods for different items on the menu? Will these prices you have set support your overall cost structure?

You are required to cost out at least 3 sets of items on the menu for each course
(entres, main course & dessert) and provide a costing sheet. Create and write descriptions for each menu item. Remember, a good menu will sell the food.

Incorporate your menu items and prices in your new menu. Complete this
assignment with a menu sample. Be creative and produce a menu, as your group would like it to be in the food operation.

A manpower plan, which cover the service area and kitchen operations full time
and part time. How would you manage the labor costs? Prepare financial analysis: Break-even point, and an appropriate income statement forecasted revenues, various operating expenses, and profits. 2. Submission Requirements Your report must include appropriate headings, adequate research and appropriate referencing. It must include a title page, page numbers, appropriate header or footer. Use properly titled tables and charts wherever possible, if needed. Attention must be paid to grammar and spelling. Please think carefully about your rationale to ensure that each point supports your concept and backs up all required points as listed above. A 3,000 words report and you need to make sure that the points below have been followed:

In accordance with the University policy, late submissions will not be accepted other than in exceptional circumstances. Such cases should be discussed on a case-bycase basis with the individual lecturer. The lecturer has complete and final discretion on the granting of extensions
