Atlantic salmon is the most commonly farmed salmon Salmon production has continuously been on the rise since 1982 In 2007, the salmon aquaculture was worth and estimated

Where does salmon come from?


Salmon farming is considered an aquaculture
Aquaculture - The cultivation of aquatic plants or food

Majority of farmed salmon comes from Norway and Chile (combined 64%)

Reproduction - begin in fresh water hatcheries with artificial fertilization Adaptation - transition to saltwater that normally occurs in the spring Cultivation - raised in floating sea pens until they grow approximately 5 kilos (11 lbs.) Harvest and Production - fish are seined up and pumped into harvest vessels, then taking to processing plants to be distributed through out the world

Ingredients
Salmon:

3 tablespoons light brown sugar

1 tablespoon honey

2 tablespoons butter

1/4 cup Dijon mustard

2 tablespoons soy sauce

2 tablespoons olive oil

1 tablespoon finely grated ginger

Vegetable oil

Salt and freshly ground black pepper

8 salmon fillets, 6 ounces each

Directions
On the side burner, melt the brown sugar, honey and butter in a small saute pan over medium-high heat. Remove from the heat and whisk in the mustard, soy sauce, olive oil and ginger. Let cool. Preheat grill to medium heat. Brush salmon with vegetable oil
