South African Rusks

INGREDIENTS
3 beaten eggs
1 1/2 cups sugar
1 teasp salt
625 mls buttermilk
500gms margarine
1 kilo SR flour
1 cup All Bran
1 tabsp Baking Powder

METHOD
Melt margarine add eggs, sugar, salt &
buttermilk. Mix together SR flour, All
Bran & baking powder.
Mix all and bake 1 hr at 180C
Cut into bars.

Maymes Mexican Tortilla


Soup

INGREDIENTS

Garlic
Chicken broth 1600gms or more
needed
1 Can corn drained
1 Can green chilies and tomatoes
1 cup rice
Cooked chicken
Crisp tortillas
Grated cheese
Canola Oil

METHOD

Cook 1 cup rice


While rice cooking saute 4
cloves of garlic in 2 tabs canola
oil
Add chicken stock, corn & green
chilies and tomatoes, add
chicken, simmer on low heat
until rice is cooked.
Add in cooked rice
To Serve- place crisp tortillas in
a soup bowl, spread grated
cheese over and ladle soup
over this.

Beef Stroganoff
INGREDIENTS
1lb stewing beef
2oz butter
2 sml onions
1/4 lb sliced mushrooms
1 cup sour cream (1/2 pint)
2 tabs parsley/chives
S&P
Nutmeg
1/2 teasp basil
1/2 cup beef stock

METHOD
Cut meat into pieces or slices. Heat
Butter and fry onions. Add meat and
brown. Lower heat add mushrooms,
pepper, nutmeg, basil and stock. Bring
to boil simmer 45 mins. Add sour
cream check seasoning. DO NOT
REBOIL.
Sprinkle with parsley serve with
steamed rice.

Chicken - Asparagus Bake


INGREDIENTS
1 cooked chicken
1 tin mushroom soup
1 cup cream
2 tabs sherry
Fresh Veg/canned veg eg asparagus &
broccoli

METHOD
Mix together.
Layers as follows:
Vegetable
Chicken flesh
soup mix
grated cheese & paprika
Bake 200C 20-30mins. Serve with salad
& rice.

Roast Chook
INGREDIENTS
3 slices brown bread
1 stick celery
Chopped parsley
Thyme
3 spring onions chopped
Fresh tomato chopped
Lemon juice and egg to bind

METHOD
Mix all together and stuff over the
breast
under the skin and secure with scewers.

Lemon Chicken

Chilli Sauce
INGREDIENTS
500 gms red chilies
125 gms fresh ginger
6 garlic cloves
2 teasp grated lemon rind
1/2 cup caster sugar
1 cup white vinegar

Blend all

soya sauce 1tabs

1 clove
Juice 1 lemon and rind

INGREDIENTS
3 chicken breasts
Marinade:
1/4 cup sour cream
1 tab dijon mustard
1/4 cup milk
Coating:
1/3 cup chopped walnuts

INGREDIENTS
30 oz ketchup tomato
1 cup oil
1 cup white vinegar
1 lb cocktail pickled onions
1 lb cauilflower
1 lb gerkins sliced
1 lb green pepper cubed
2 sml tins red peppers
1 lge jar black olives
1 lge jar stuffed green olives
1 can green string beans
1 lge can anchovy fillets
1 lb whole button mushrooms sliced
450gms tuna

METHOD
Put ketchup, oil, vinegar into pot and
boil 10 mins stirring all the time.
Add all ingredients other than TUNA
and ANCHOVY to ketchup and boil 510mins before adding fish.
Sterlise bottles add mixture keep in
fridge after opened.
