Colour of coffee as it was roasted with different time

and tempeterature

Color is a perceptual phenomenon that

depends on the observer and the conditions in
which the colors observed. It is a characteristic
of light, which is measurable in terms of
intensity and wavelength.
Color of a material becomes visible only
when light from a luminous object or source
illuminates or strikes the surface.

Light is dened as visually evaluated radiant energy

having a frequency from about 3.91014 Hz to 7.9
1014 Hz in the electromagnetic spectrum (Fig. 4.1).
Light of different wavelengths is perceived as having
different colors.

Therefore, light appears white to the human eye.

However, when light interacts with matter, only certain

wavelengths within the visible region may be
transmitted or reected. The resulting radiations at
different wavelengths are perceived by the human eye
as different colors, and some wavelengths are visibly
more intense than others.

Color Order System

Munsell

The Munsell Color System was developed in

1898 by an American artist and teacher, Albert
Munsell

Thousands of colors could be described by

using hue, value (lightness), and chroma

(saturation) in this color system (Fig.1)

Hue is a quality by which one color is distinguished from

another. It is the attribute corresponding to whether the object

is red, orange, yellow, blue, or violet.

Value is, Munsell dened value as the quality by which light

colors can be differentiated from the dark ones. Value is a

neutral axis that refers to the gray level of the color ranging
from white to black (Fig. 4.12). It is also called lightness,

luminous intensity, and sometimes brightness. It describes the

relationship

Chroma is the quality that distinguishes a pure

hue from a gray shade. The chroma (saturation
or purity) axis extends fromthe value (lightness)
axis toward the pure hue. A pastel tint has low
saturation while pure color is said to have high
saturation. Two objects having the same
lightness and hue can be differentiated from
their saturation. In the Munsell system, chroma
is dened by 10 or more steps (up to 16 steps)
in the radial direction. It is a measure of the
difference from a gray of the same lightness.

CIE Lab (CIELAB) Color Spaces

The CIELAB color measurement method was
developed in 1976 and offers more advantages
over the system developed in 1931.
It is more uniform and based on more useful and
accepted colors describing a theory of opposing
colors.
The location of any color in the CIELAB color
space is determined by its color coordinates: L,
a, and b.

L represents the difference

between light (L = 100) and dark
(L = 0).
a represents the difference
between green (a) and red (+a),
b represents the difference
between blue (b) and yellow
(+b).
If the L, a, and b coordinates
are known, then the color is not
only described, but also located in

Hunter Lab

This system is based on L, a, and b measurements.

The L value represents lightness and changes from 0

(black) to 100 (white).
The a value changes from a (greenness) to +a
(redness) while
the b value is from b (blueness) to +b (yellowness).

Like the CIE system, the Hunter scale is also derived

from X, Y , Z values.
