DEFINITION OF SUGAR,

Sugar is an important source of food energy.


During digestion, all food carbohydrates (starches
and sugars) break down into single molecule
sugars. These sugars are absorbed from the
intestine into the blood stream and travel to the
cells, where they are used to provide energy for

What is the formula for a simple sugar?

Simple sugars are carbohydrates. Glucose and


fructose are monosaccharide's and sucrose is a
disaccharide of the two combined with a bond.
Glucose and fructose have the same molecular
formula (C6H12O6) but glucose has a six member ring
and fructose has a five member ring structure.

The sulphited syrup is pumped into pans for crystallization.
The process of crystallization initiated in pans is completed
in the crystallizers. After mother liquor is exhausted to the

been converted into sugar crystals, the two constituents are
separated in the centrifugal machine. The residual mother
liquor is termed as molasses, a bye product used for
producing Ethanol
