Day in the Life of a School

Canteen Employee at SBNCHS

I. Introduction
A school canteen employee is a paid
worker hired by the canteen
management to conduct the day-to-
day operations of the canteen
business. This employee operates and
manages the canteen from purchasing
the items needed to selling these to its
customers. Together with the canteen
management, they provide the school
community with nutritious and
affordable snacks.
There are two types of school canteen
management in the Philippines: school
managed type and teachers cooperative
-managed type. Currently, the second type is
the school canteen management that was
implemented in Santa Barbara National
Comprehensive High School. There are two
canteens located in this school namely
Canteen 1 and Canteen 2. Both are teachers
cooperative - managed. The daily operations
are being managed by the Canteen Manager
with the help of the paid worker.
This study aims to gain an in-
depth understanding of the job of
a school canteen employee and
the management practices
he/she applies in managing and
operating the canteen business.
II. Definition of Terms
School Canteen in this study, school canteen refers
to the Canteen 2, the canteen operated by Nang
Monang which sells food items to the students. A
school canteen can either be school- managed or
teachers cooperative-managed.
Capital in this study, capital is the money invested
in the canteen business to generate income.
Accounting in this study, accounting is the
systematic process of identifying, recording,
summarizing, interpreting, and communicating
financial information.
Stocking in this study, stocking is the term used to
describe the process of filling the store's shelves and
displays with merchandise for sale, commonly
referred to as "stock.
Merchandising in this study, merchandising
is the type of business that the canteen
conducts. It purchases finished products and
resells them to consumers.
Inventory in this study, inventory refers to
thegoodsand materials that the canteen holds
for the purpose of resale.
Inventory Management in this study,
inventory managementis the practice
overseeing and controlling the storage and
uses of the items the canteen sells.Inventory
managementis also the practice of overseeing
and controlling the quantities of products for
sale in the canteen.
Target Market in this study, target
market refers to the customers of the
canteen. These customers are the students,
the faculty and staff of the school.
Salary in this study, salary is the money
receives by Nang Monang every week
Profit in this study, profit is the surplus
remaining after total costs are deducted
from total revenue

Sales in this study, sales is the term used


to describe the total amount of money that
abusinessreceives from selling goods or
services
III. The Respondent
Ramona Nang Monang Dabucon is a 56-
years old school canteen employee at
Santa Barbara National Comprehensive
High School. Shes been working for
almost twenty-two years. Nang Monang
receives one thousand pesos as her
weekly salary. Under the supervision of
Maam Camias, the canteen manager,
Nang Monang carries all the
responsibilities in operating this small
business. Nang Monang starts her canteen
operations from 8 a.m. - 5 p.m.
IV. Scopes and Limitations
This study aimed to gain an in-depth
understanding of the job of a school canteen
employee and the management practices
he/she applies in managing and operating
the canteen business.
This study is only limited on determining
how a canteen vendor lives her life. The
respondent came from the group of SBNCHS
school canteen vendors.
This study was conducted at SBNCHS school
canteen, Santa Barbara, Iloilo on January 29
to February 13, 2017. This study is a
qualitative research.
V. Interview Protocol
The following were the questions prepared
for the interview:

1. When did you start working in this


canteen?
I started working in this canteen 5 years
ago.
2. Who owns this canteen?
The Canteen 2 is owned by the TVE
department and currently being managed
by the Canteen Manager, Maam Camias.
3. Where do you get the capital used to
purchase the items in this canteen?
The initial capital provided by the Canteen
Manager is five thousand pesos (Php
5,000.00); this initial capital is used in
purchasing commodity goods on a daily
basis.
4. What are the products that are in-demand
for the customers?
The in demand products for the students
are chips, cookies, sandwiches, tetra pack
juices etc.
5. Is there any product (s) that is/are
prohibited to sell in this canteen?
The sale of carbonated drinks is prohibited.
6. When do you purchase the items needed?
The items are purchased on a daily basis.
7. How much is the average total cost of the
items needed?
The average total cost ranges from Php
2,000.00 to Php 3,000.00. Sometimes it
varies depending on how many items are
needed to buys and how much profit was
earned from the previous day.
8. Where do you purchase the items sold in
this store?
The items are purchased daily at El Vingels
Mini Mart.
9. What skills as an employee are needed in order
to manage and operate this canteen?
Managing and operating a canteen requires basic
skills in accounting, stocking, merchandising, and
inventory. Be sure to apply proper inventory
management so you dont run out of stocks and
maintain a good relationship with your customers.
10. What are the tools do you use in computing the
sales and profit of this canteen?
Calculator and logbook
11. What are your tips in making this canteen
successful?
You need to determine your target market and
find out what theyd be willing to buy from the
canteen.
12. How much is your weekly salary?
My weekly salary is one thousand pesos (Php
1,000.00)
13. How about the competition?
There is no such competition since the
location of this canteen is far from the other
canteen.
14. Do you have other jobs aside from this?
I dont have other jobs but we domesticate
animals at home. This is where I also get
extra income from.
15. How many hours do you work in a day?
Generally works 8 hours in a day
16. What is the profit and sales of the store?
Average sales is Php 18,000.00 per month
while the profit is Php 20,000.00 per month
VI. Conclusion
The work of a school canteen employee
seems easy to others. But based on the
gathered data, this job requires more
than just purchasing, and selling the
products to the customers. Good
management practices are vital to make
this business efficient and successful.
According to the respondent, learning the
basics of accounting, merchandising,
stocking and inventory are essential
skills that keep the business rolling.
She also stressed the importance of
proper management of inventory to avoid
the business from running out of stock.
Furthermore, she emphasized the
significance of maintaining a good
relationship with her customers. All in all,
operating a canteen business is not a
simple task. It requires good management
and marketing practices to provide its
customers with inexpensive commodities
and at the same time be financially self-
sustaining.
