ANTI-OXIDANTS
• a substance added to fats and
fat-containing to avoid oxidation
and thereby prolong their
wholeness. It should not contri -
bute an objective odour, flavor,
or colour and a harmful effect
to the food in which it is
present.
• To prevent oxidation or delay its
process . Antioxidants are added in
food.They increases the shelf life of
food.

happens, oxygen steals electrons from
iron. Oxygen gets reduced while iron
gets oxidized.

also commonly used as a
flour improver.
In reality, ascorbic acid is

not the whole Vitamin C.

which are forms of vitamin E.

antioxidant. It works in the
same way as butylated
hydroxyanisole, but has
caused controversy, as it
has produced adverse
effects in dogs.However, it
also has anticancer effects.

hydroxytoluene, is a lipophilic
organic compound, chemically a
derivative of phenol.

a preservative for unsaturated
vegetable oils and many edible
animal fats.It can be combined
with other preservatives such as
BHATBHQ(is an additive to
preserve processed foods).
