DEFINITION OF TERMS
 SAFETY - The state of being free from harm, loss or
danger.

 HEALTH - a state of complete physical, mental, and


social well-being and not merely the absence of
disease or infirmity.

 HEALTH PRACTICES - the actions by which


individuals can prevent diseases and promote self-
care, cope with challenges, and develop self-reliance,
solve problems and make choices that enhance health.

 CCP (critical control points)
- a point, step or procedure at which
controls can be applied and food safety
hazard can be prevented, eliminated or
reduced to acceptable critical level.

- It is a management system in which food safety is
addressed through the analysis and control of
biological, chemical and physical hazards from raw
materials production, procurement and handling, to
manufacturing, distribution and consumption of
the finished product.
