Very popular among consumers for low in fat, stomach filling and good in taste. From investors point of view it is highly profitable. It costs only $0.10 to make a bagel and can be sold for $0.50 each or more. Many stores generates an average of $800,000 sales annually. PRODUCTION PROCEDURE Production is done in batches according to flour on a daily basis. Begins at processing plant where basic ingredients are combined in a special mixing machine. After dough has been mixed , it is transfer to another machine that shapes the dough into individual bagels. Production Procedure Continues…. Once the bagels have been formed, they are loaded onto refrigerated trucks for shipping to stores. Final two steps of processing after unloading from truck involve boiling the bagels in a kettle of water and malt for one minute and then baking bagels in an oven for approx. 15 minutes. Quality is always an important feature of a successful business. Customer judge the quality by size, shape, shine, taste and consistency. Customer are sensitive to the service they receive when they make their purchases. Bruegger’s devotes careful attention to quality at every stage of operation from choosing suppliers to keeping equipment condition and monitoring output at each step. Employees are instructed to remove deformed bagels when they find them.
