The Cajamarca Carnival is one of the largest

festivities celebrated in Peru. Carnival is joy,


celebration, music and original costumes. No one is
saved from a bucket of water, from the dyes and a
good drink of chicha of jora and one of its typical
dishes that characterizes this event is the spicy potato
with fried guinea pig.

Ingredients

It is prepared based on dressing with oil, garlic,
pepper, salt, chili ground panca and cumin.

Spicy potato
It is served with a potato stew, seasoned with aji
panca, peanuts, pepper and salt. You can
accompany it with a creole sauce of chopped
onion and rocoto seasoned in lemon.

This event is very important in the town since it brings


together all the families to celebrate it with this
Cajamarca banquet, the guinea pig in one of its best
expressions, a delight.
