Mongolian Artisan Cheesemakers Union
MACU (Mongolian Artisan Cheesemakers Union LLC) was established in July 2015 to develop, produce, sell,
distribute and market artisanal cheeses made in Mongolia since 1995. It is a socio-economic-ecological
enterprise that brings a new approach to the commercial utilization of Mongolia’s nomadic pastoral milk
resources. MACU’s goal is to build more than 100 small-scale cheesemaking facilities across the country and
to make cheeses from the nomadic pastoral dairy signature products of Mongolia. Three small cheesemakers
now distribute through the MACU network. Three new cheese plants are currently under construction, all in
remote areas of Mongolia. MACU’s cheesemakers produce 15 cheeses, many of which are world class, some
of which are unique.

MACU’s approach starts with the observation that
most of Mongolia’s milk is produced during the Highest quality artisanal

Tumurkhuyag Urtnasan is doyen of Mongolia’s


artisan cheesemakers. He has been making his
now famous Khustai Gouda in an off-grid atelier
on a remote mountain steppe since 1995. Loyal to
the wild grasses and nomadic cows from which it
come, Khustai Gouda is one of MACU’s most
popular cheese, always a fine partner to a good
wine, a fresh baguette or a picnic apple.
