EGGS AND PANCAKES


Breakfast table set up
Before starting breakfast service,
Don’t forget:
English and herbal teas

Milk (hot & cold)

Cream

Cold water pitchers

Assorted warm sweet rolls and bread rolls

Individually wrapped butter on ice

Individually wrapped margarine on request

Individually marmalades, jams, jelies and honey


Poached Eggs Hard Boiled Eggs
Eggs Benedict
2 halves of toasted English muffin over 2 pieces of
Canadian bacon.
2 tablespoons chopped parsley, for garnish.
2 poached eggs.

Hollandaise Sauce
10 Tbsp unsalted butter
3 egg yolks
2 teaspoons of White vinegar.
1 Tbsp lemon juice
1/2 teaspoon salt
Dash of cayenne pepper

Pancakes French Toast Belgian Waffles
Ingredients: Ingredients:
• 6 thick slices bread • 1 (.25 ounce) dry yeast
Ingredients: • 2 eggs • 1/4 cup warm milk
•2 Cups All Purpose • 2/3 cup milk • 3 egg yolks
Flour • 1/4 teaspoon ground • 3/4 cup butter, melted and
cooled
•2 Tsp Baking Powder cinnamon(optional)
• 1/2 cup white sugar
• 1/4 teaspoon ground
•1/2 Tsp Baking Soda • 1 1/2 teaspoons salt
nutmeg(optional)
•1/2 Tsp Salt • 1 teaspoon vanilla • 2 teaspoons vanilla extract
•3 Tbsp Sugar • 4 cups all-purpose flour
extract(optional) • 3 white egg
•2 1/4 Cup • salt to taste
Buttermilk
•2 Tbsp Vegetable Oil
•2 Eggs
