STATEMENT OF THE PROBLEM
• The recent Zambia demographic health survey (ZDHS) carried out in 2018 showed all three nutritional
status indices (stunting, wasting, and underweight) revealed that 35% of the children under the age of 5
years were stunted, 4% wasted, 12% underweight and The proportion of overweight children has
remained relatively stable from 2013-14 to 2018 (6% and 5%, respectively).
• At 35% stunting rates, Zambia`s malnutrition levels are among the highest in the world.
• In the case of women, it was found that 10% (8% urban and 11% rural) were underweight and 19%
(30% from the urban and 11% rural) were overweight or obese (Mukuka and Mofu 2016). Ruel-
bergeon and colleagues conducted a study where they evaluated the changes in global hidden hunger
which was defined as the deficiencies in essential vitamins and minerals.
SIGNIFICANCE OF THE STUDY
STUDY JUSTIFICATION
• In the clinical setup, knowledge of nutrient composition is very cardinal in the prescription of diets
containing known amounts of nutrients for the treatment of different diseases as well as in the
correcting the nutritional values of a given diet (Rolfes et al., 2009).
• Malnutrition can be managed through nutritionally balanced and adequate intake of specified
nutrients where the majority cannot afford conventional supplements and most highly nutritious
foods.
• Considering the popularity of the Trigonella foecum-graecum seeds amongst the Zambian people
it is necessary to provide scientific evidence on the nutritional value of the seeds
RESEARCH QUESTION
• What macronutrients and micronutrients are present in Trigonella foecum-graecum seeds and in
what concentration?
OBJECTIVES
Main objective
• To determine the nutritional value of Trigonella foecum-graecum seeds.
Specific objectives
Ethiopia
Saudi Arabia
India
Ukraine
METHODOLOGY
• Study site- This study will be carried out at the Ministry of Health, Food and Drugs Control
Laboratory (FDCL)
• Instruments
Chemicals =Boric acid, HCL, nitric acid, perchloric acid, distilled water, NaOH and AOAC
reagents
METHPDOLOGY CONTINUED
Analytical scale, plastic spatula, filter paper, volumetric flask, beakers, plastic and glass test tubes,
crucible dish, hand gloves, atomic absorption spectrophotometer (AAS-Buck model 210 VGP),
motor, pestle, plastic sieve and hot platee
• Data analysis
Data obtained from this study will be analyzed statistically using statistical package for
social sciences (SPSS) v.23
One-way analysis of variance (ANOVA) will be used to determine whether there was
significance difference in the average concentration and nutrient content.
