EXPERIMENT NO.

3
LIPIDS
OBJECTIVE

• To use the different qualitative tests to characterize lipids

PROCEDURE

• SOLUBILITY TEST
• In each of the test tubes containing distilled water, ethanol, ether,
chloroform, benzene and 5% NaOH, add 5 drops of cottonseed oil.
• Shake thoroughly
• Note the solubility of the cottonseed oil with each of the liquid
samples
• RANCIDITY TEST
• In each of the 3 test tubes containing fresh coconut oil, test the
reaction with phenolphthalein, methyl orange and pH paper.
• Note the result.
• Repeat the test with the three test tubes containing rancid coconut
oil.

• What causes rancidity in fats and oils? How can it be prevented?
• What purpose does cholesterol serve in the body? What can we
do to reduce serum cholesterol.
• What is the clinical importance of the quantitative determination
of cholesterol in blood?
