Purchasing – is an important activity,


because the quality and cost of materials
at the time of purchase largely
determining the quality and cost of the
finished product.
Effective purchasing aims the following:

1. Provide an adequate supply


* This will ensure that foods stay fresh and will create a high
inventory turnover. The right quality in the right quantity and
right price.

2. It is important for the food to be purchased at the right


time.

* Large cities have a greater number and variety of suppliers


than do small towns and isolated communities. ime and from

5. Use polite expression remarks when buying and asking for goods.

6. Avoid unnecessary remarks if you do not approve of the price.

Inspect Food Packages
• Check the label for the expiration date (manufacturing date)

• No holes, tears or openings in food packages.

• Frozen foods should be solid with no signs of thawing.

• Refrigerated foods should feel cold.

• Check safety seals

A loose lid on a jar means the vacuum has been lost and the product may be contaminated. Don't

buy a food product whose seal seems tampered with or damaged. Report a defective cap to the

store manager.

• Avoid buying any cans that are deeply dented (one that you can lay your finger into), bulging,

rusting or have a dent on either the top or side seam. Deeply dented or bulging cans may be a

warning sign of C.botulism, while cans with a sharp dent may damage the seam and allow bacteria

to enter the can.

1. Chose whole grain cereals rather than refined ones.

canned ones.
Many vitamins are soluble in water and many are
destroyed by high temperature involved in canning.

fruits and vegetables that have been ripened in
the vine.

5. Choose bright orange carrots, deep orange sweet potatoes,
and dark leaf lettuce for maximum Vitamin A content.

• Pork is pinkish red while beef is dark red.
• Know the desired part of the meat before buying.

• Young chicken has smooth legs

• Know the desired part of the chicken for cooking

needs.

• The meat should be yellowish pink.

• Turkey and chicken are lower in overall saturated fat

and calories than red meat

• The flesh is firm and scales are

fully shiny.

• Free from unpleasant odor

• The belly walls are intact.

• The eyes are full and bright

• The gills are red, not gray or

brown
