Banana flour cookies is a functional food with a low
glycemic index. The formulation incorporate banana flour,
corn flour, rice flakes, unsalted butter, egg and sugar.
Proximate composition was carried out. Moisture and
dietary fibre content increased, but protein and fat
decreased. Incorporation of BF increase total starch in the
cookies. As a result, BF cookies contain higher resistant
starch (RS). It is important to the beneficial effects
associated with its fermentation in the colon. Thus the
rapidly digestible starch decreased and the slowly
digestible starch increased. Incorporation of BF in cookies
is important to obtain a product with higher fibre content.

1.It is Eco-Friendly as using local grown plantain.
2.The industry striving to support others that work to live
by utilization of banana fibre as cottage industry and
decorative items for income generation by rural women
and produce eco-friendly and sustainable communities.
3.Recycle items like using all the plant parts to make
fertilizer. Banana fibres are good absorbent, highly
breathable, quickly dry with high tensile strength,
biodegradable and have no negative effect on
environment.
4.Promote banana plantation as they give us oxygen,
fruits, fibre, prevent soil erosion, control floods, provide
shelter to wildlife.
