Are small servings of food and


beverages which help in increasing
the appetite slightly.
HORS D’OEUVRE
- A food served in small portions before the main
part of the meal.

CANAPÉS
- A small piece of bread or a cracker that has cheese,
meat, fish on top of it and often served at a party.
• 3 Differences between Hors ‘doeuvre
and Canapés :
• Hors d’oeuvres are not served on a bread or
crust plate.
• Hors d’oeuvres are eaten with cocktail picks
or cocktail forks.
• The major ingredient of hors d’oeuvres is
usually served whole rather than pureed,
chopped or made into spread.

On skewers, arrange the following: chicken liver and gizzard
cooked as adobo, pineapple chunks, sliced cooked shrimps,
sliced pickles, and Vienna sausages, cut crosswise. Serve.

asparagus spears or fill with a spread.
Canapés
Bite size open faced finger food consisting of a
bread type base, spread or topping or garnish.

The garnishes are usually portions of meat, fish,


chicken, egg or cheese or a combination of
these foods with bits of fruits and vegetable.

Breads may be sliced or cut into shapes-


squares, rectangles, circles, triangles, diamonds-
using knife.
