Objectives

cocktail appetizer and dips

making cocktail appetizer and dips for

• Cocktail is not only referred to as
alcoholic beverages and fruit juices but
are also for group of appetizers.
• Cocktail Appetizer refers to seafood or
fruit with tart or tangy sauce. It is
always served chilled, often on a bed of
crushed ice.
• Dips are perfect accompaniment for
raw vegetables, chips and crackers.
Hot and Peppery Cocktail Shrimp
Ingredients
• 170 g uncooked medium shrimp, peeled
deveined
1 medium red onion, chopped
½ tsp grated lime peel
15 ml lime juice
4 ml soy sauce
A pinch of pepper
1 garlic clove, finely chopped
2.5 ml sesame oil

Procedures

• Wash and deveined the shrimp. To deveined, use a


toothpick to make a slit along the back from the head
to the tail end of the shrimp. Look for the black sand
vein and carefully remove it.
• Mix all ingredients except oil in a bowl. Cover and chill
for 4 hours.
• Wipe the rectangular pan with sesame oil and
arrange the shrimps in single layer.
• Pre-heat oven to 170 °C. Bake at 170 °C for 10 to 12
minutes or until shrimp are pink and firm. Add some
lettuce leaves and tomato catsup for garnishing. Serve
immediately while it is hot.
Cheddar Cheese Dip

• Ingredients 

94 g cream cheese
38 ml evaporated milk
44 g mayonnaise
7.5 ml lemon juice
75 g onions
½ ml hot red pepper sauce
½ ml Worcestershire sauce
75 g cheddar cheese
Tools and Equipment
• Bowl
• Spatula
• refrigerator
Procedure
• In a bowl, place all the ingredients
and blend it well.
• Taste and adjust the seasoning.
Chill it in the refrigerator until
ready to serve
