AKLAN
(FAMOUSDELICACIES)
(FAMOUS DELICACIES)
1. Binakoe/binakul
• Traditional binakoe is cooked
inside a fresh node of bamboo.
Native chicken plus onions and
lemongrass are added. For the
souring agent, aeabihig leaves
complete the mix. Think of this
dish as similar to the sinigang
and might appeal to Tagalog
palates.
2. Inubarang manok
Native chicken cooked with the
said ingredient, gata and
lemongrass results in a stew like
dish that has a thickish soup. I
just love the gata taste, the
tenderness of the chicken and
the hint of tanglad (lemongrass).
3. Linapay or Tinamuk
• Ueang (pounded freshwater
shrimps and gawud (young
coconut meat) are wrapped in
gutaw (taro) leaves and cooked in
coconut milk. Like the Bicol
Equivalent, its a heavenly dish
because of the gata and taro
leaves. Slice in peppers and it can
be a very flavorful and spicy dish.
4. INDAY INDAY
• This is a simple dessert made
from sticky rice flour (malagkit)
cooked in hot water, just like the
palitaw and topped with bucayo,
gelatinous coconut meat
simmered in water, muscovado
sugar and coconut milk.

experience, order it with garlic rice
and dip it in sinamak vinegar, which
is vinegar mixed with calamansi and
chili. Other than chicken inasal,
other Filipino food staples such as
talaba (oysters), isol (chicken butt)
and chicken skin are also sold.
Seafood
A lot of places in the Philippines are big
into seafood, and that’s something that
you get when in Bacolod. In the city, you
have places called “pala-pala” where a
variety of fresh seafood is put on display
and you choose what you want and
instruct them on how you want it cooked.
So, basically, you can choose a good-
looking fish and have them fry it.
Piyaya
Also spelled piyaya, this is one of the
delicacies people from the Philippines
mostly associate with Bacolod. It’s a
flaky flat bread with dark muscovado
sugar. The exterior is also sprinkled
with sesame seeds to give it a nutty
dimension. You can usually buy these in
packs at pasalubong centers and you’ll
also find it offered in ube flavor.
Napoleones
This is another one of Bacolod’s
famous delicacies. It’s a layered
puff pastry that is filled with
custard cream and then glazed
with white sugar on top. They are
sold in small square sizes or larger
rectangle sizes.
Cakes
Cakes are found everywhere in the
Philippines, but your visit to Bacolod

having tasted the fine cakes and
sweets from their lovely pastry
shops. Two of the most popular
ones are Calea and Felicia’s.

McNester Mango Jam
McNester originates from Guimaras, land

Philippines Brand's in that it takes on a
uniform consistency and is more akin to
jelly than jam—but is set a touch less firm
so it spreads easier.

Chicken molo soup
is a dumpling soup made from wontons
filled with shredded chicken and,
sometimes, combined with ground pork
or shrimp. Wontons are made from rice
flour, and it was named after the old
district of Iloilo where it was produced,
Molo.
Binacol
chicken binakol, which is a tinola-like dish.
The chicken soup, which is also a comfort
food of some Ilonggos, is flavored with
ginger, garlic, and onion with chunks of
chayote or papaya and chili leaves. The
only difference is the addition of coconut
meat shreds and cooking it in coconut
water that gives binakol its milky taste.
La paz Batchoy
Originating from La Paz district, this dish is
among Ilonggos’ favorites. La Paz batchoy
is made from miki noodles with pork offal,
beef loins, chicken stock, and crushed
pork cracklings, toasted garlic bits, and
raw egg as toppings. Miki is made using
flour and egg as the main ingredients.
Kansi
For some, kansi is the fusion of bulalo and
sinigang. However, the Ilonggos want to
define it on its own terms. It is a truly
unique and flavorful soup. Beef shanks
with rich bone marrow are its main
ingredients. The already hearty broth is
enhanced by a souring agent called
batwan.
Chicken Inasal
Throughout the years, the Filipinos have seen the invasion
of the tasty chicken inasal which is truly an Ilonggos’ pride.
It is a ubiquitous dish wherein you’ll find hole-in-the-wall
diners and fine dining restos serving inasal. Chicken inasal
is, of course, also popular in Bacolod.

Still, there is nothing like the inasal of Iloilo—as cooked by

the Ilonggos in their homes or own restos. They make it
exceptionally well, from the marinade composed of
coconut vinegar, calamansi juice, annatto, and pepper. The
annatto oil gives the inasal its bright orange color. The
chicken is grilled and basted with the same marinade while
grilling.
