DRYING, SALTING, SUGAR PRESERVATION,
CURING AND PICKLING

Grade VI- Genesis
Raisins/Pasas
Ingredients:
- 500g of Grapes
- Salt
- Water
Rasins/Pasas
Procedure
- First, clean the grapes
- Next, soak the grapes in a boiling water
with salt
- Then, take the grapes with a strainer
and put them on a clean plate with a
tissue paper
- Last, cover it with a clean cloth and
then let it be exposed to the sun
Fish Bagoong

Ingredients
- 1/2kg Dilis (anchovy)
- Salt
- Water
- Fish sauce (if we want
to make it more tastier)
Fish Bagoong Procedure
- Put a water in a basin and add a few spoon of salt
and dissolve it
- Then, soak the fish on the water
- After soaking the fish for a few minutes, drain it
for a few minutes too
- After it totally drain, add a liitle more salt and
mix and after that, put it inside a clean and dry jar
- Add a few fish sauce (patis) and also add at least
1 spoon of salt after you put it on a jar
- After that, cover it with a plastic on top and then
cover it with a jar lid
- Wait it for a few months to ferment
Coconut Jam
Ingredients
- 1 cup of brown sugar or we
can also use sangkaka
(minatamis na bao)
- ¾ cup Coconut Milk
Coconut Jam
Procedures
- Strain the 3/4 coconut milk and put it in the
pan and mix it and then place it on the stove
- Mix it until it simmer and add 1 cup of sugar on
it and mix it again
- Continue mixing it until it becomes thick
- When it becomes thicken, turn off the heat
and let it be cold a bit
- And lastly, put it on a container or a jar
Bacon

Ingredients
- 1360g pork belly
- 2 cups (400g) kosher salt
- 1 cup (200g) granulated sugar
- 6.5 teaspoons (60g) pink curing salt
Procedure
Bacon - Put the 2 cups of kosher salt, 1 cup of
granulated sugar and the 60g pink curing salt on
a large bowl and mix it together
- Next, spread the mix ingredients over the
entire pork belly portion
- Place the pork belly inside a Ziploc Bag. You
can also add some more flavoring on the pork
belly before putting it inside the Ziploc bag
- Put the pork belly on a fridge and wait 5-7
days to brine it
- After a few days, remove the pork belly on
the Ziploc bag and wash it and dry it using a
paper towel
- Then, put it in an oven or a smoker or you
can also just grill it
- Lastly, cut the pork belly into tiny slices and
there you have it
Ensaladang Pipino/Cucumber Salad
Ingredients
- 2 pcs. cucumber
- 1 pc. large red onion
- 2 pcs. red pepper
- 1 cup of water
- ¼ tsp. ground black pepper
- ½ tsp. salt
- 1 tbsp. white sugar
- ½ cup vinegar
Ensaladang Pipino/Cucumber Salad
Procedure
- Wash and peel the cucumber
- Cut the cucumber into thinnest
pieces
- Put all the ingredients in a bowl and
mix it well
- Then lastly, add the cucumber and
mix it well and gently
