EARLY HOSPITALITY

• Believed started back in 12000 (40 BC) years ago.


• The concept started in Greece, Rome and Biblical times.
• In ancient times, people felt the requirement of hospitality –
they believed that hospitality to strangers was necessary to their
religious well-being.
• Hospitality in Ancient Greece is missionaries, priests and
pilgrims formed a very large part of the travelling public. – Visit
to holy places, perhaps oracles or temples that had a dominant
position in their relation.

MEDIEVAL PERIOD

• During medieval period the travelers were English people.


• Inns were actually private homes. – Nobilities stayed in
monasteries.
• In ancient Persia accommodation known as ‘khans’ were
constructed - Development of ‘posthouses’ by the Persians
along the caravan routes.

RENAISSANCE & FRENCH
REVOLUTION
• During this period there were high demand for inns and taverns.
– Hotel de Henry, the first hotel, was build on 1788.

• THE FRENCH REVOLUTION – Changed the course of


culinary history.
• Escoffier brought the brigade system.
• M. Boulanger, father of modern restaurant, called the soup he sold
“resorantes”.

NINETEENTH & TWENTIETH CENTURY

• After world war II, travel started in many parts of the world.
• The beginning of luxury hotel and resort.
• In 1898 Savoy Hotel opened in London.
• The general manager was Cesar Ritz.
• Chef was Auguste Escoffier.

1960 TO TODAY

• There was a major growth in casual dining.


• Development of mass tourism. – Appraisal of package travel.
• Increase in the number of hotel chains. – Mergers and
acquisitions emerged.

• Globalization – travel freely all over the world
• Safety and security – terrorist in tourist attraction
• Diversity – employment and guest
• Service – guest expectations
• Changing demographics – baby boomers
• Price – value relativity.
• Social media influences.
• Sanitation – sanitary environment and healthy food
