Prepare Equipment and Tools for salting,
curing, and smoking
• The selection of tools, materials and equipment must be the first thing to
consider.
• Using the correct equipment for activity in food processing will contribute
to its success.

It serves as a source of heat in cooking salted,
smoked and cured products

It is a machine for cooling or keeping stored food
with a temperature slightly lower than freezing

EQIPMENT(PPE)
• Refers to any protective clothing or garment worn to protect processors
during food preparation.
• Wearing PPE involves using garments from head to foot like head cap,
mouth mask, gloves, hand towels and the laboratory gown/apron to
protect the workers from different hazards

1. Apron – serves as a protection from dirt while working or preparing.
2. Hand Towels – are used for wiping utensils
3. Mask – is used for covering the mouth while working for hygienic purposes
4. Hand gloves- are worn for protection during the preparation and handling of foods
5. Working shoes- are for workers’ safety and protection
6.Hairnets – serve hygienic purpose of avoiding contamination during preparation
OTHER SUPPLIES AND MATERIALS
• The success of any salted, cured and smoked products depend on the
proper selection of supplies and materials needed in preparing such
products.these includes:
• Office equipment and supplies like computers, printers, and the like
• Raw materials like fresh fish, meat, poultry, fruits, and vegetables
• Ingredients needed like salt, pepper, and others
• Fuel for smoking like wooden chips, charcoal, and corn hush
