Importance for Pakistan’s


agriculture

Why Fruit pulp processing?
• Pakistan 5th largest exporter of fresh fruits in Asia
• Demand of value added fruit products in both local and
international markets
• Major Pakistani food companies importing fruit pulp for
their products
• Most of the imported fruit pulp has been made from fruit
that has been exported from Pakistan

What is fruit pulp processing? It’s importance
• Solid mass obtained from crushing or grinding of fresh fruits
• Categorized on the basis of storage condition, i.e., in powder,
liquid or frozen form
• It increases the shelf life also no alteration in taste, color and
nutritional value of fruit
• Prevents post-harvest losses and storage constraints
Innovative ways to integrate the pulp of fruit
into food production

• As an enhancer- flavor
• As a sweetener- organic sweetener
• For nutrient value- organic source of nutrients
• As a texture agent- provides texture and smoothness
Steps involved in fruit pulp processing

Step 1: Raw material reception
• Raw material is received
• Weighed and evaluated for quality

Step 2: Sorting and grading


• preselection for further processing
• Sorted and graded on the basis of
physical parameters

Step 3: Washing and sanitization
• Fruits have a lot of dust- cause of contamination
• Chemicals and fertilizers used during farming-
chemical contamination
• Thorough washing and sanitization of fruits-
removal of all sorts of contaminants

Steps 4: Raw material maturation


• Fruit no full ripened at the time of harvest
• Passed from ripening chamber having ethylene
generator- facilitates ripening
• Carbon Dioxide produced during ripening
removed to control toxicity

Step 5: Pulp processing
i. Peeling and cutting- fruit peeled and
chopped
ii. Destoning- fruit seeds are removed
iii. Crushing- fruit is squeezed and crushed

Step 6: Pasteurization and homogenization


• Pulp may contain microbes and germ- makes
it unhealthy
• Heat treatment given- deactivates microbial
activity in pulp
• Makes the product safe and increases the shelf
life
• Pulp is stirred and mixed- homogenization

Step 7: Packaging and storage
• Pulp is cooled down
• Filled in to bottles or cans- under
aseptic conditions
• Stored in warehouse- under
optimal storage conditions
