O This study relates to the food


processing machines which used to
prepare condiments/ingredients-
particularly in the production of
salted shrimp paste.
Current situation

Shrimp paste product is widely consumed


internationally. It has various names, textures and
appearances depending on the local producer. It is
consumed both raw or cooked and generally used as
flavouring or condiments in many traditional dishes.
However, making salted shrimp paste or
“Bagoong-Alamang”, is not easy particularly on
pounding stage. In order to produce good quality
salted shrimp paste, hard labours and correct
processing procedures are required.
Problem
O Conventional processing method of salted shrimp
paste which is manual pounding process is so
laborious and inefficient.
O Due to laborious and inefficient processing method
of making salted shrimp paste, a lot efforts and times
should be rendered.
O In times of high demand of salted shrimp paste,
product quality procedure/process and food safety
have been compromised. For, in order to meet the
demand, sometimes the maker/s of salted shrimp
paste opted to trample raw shrimps using their bare
feet to make their work faster.

conventional processing method
in making salted shrimp paste.

Objective of the study
O Generally, this study aims to develop a pounding machine
that could be a means for the local shrimp paste makers to
produce shrimp paste products efficiently and convenient
compared to the conventional pounding technique.
O Specifically, the study aims to:
O Design and fabricate an electro-pneumatic operated
pounding machine for salted shrimp paste production.
O Evaluate the performance of the Shrimp Paste Electro-
Pneumatic Machine in terms of functionality, usability
and efficiency- including timeliness and product
consistency.

Machine
O Based on the concerns and problems raised by the local
shrimp paste makers, the proponent conceived to
develop a means that will answer their needs by
making simple and state-of-the-art machine. The
proposed machine intended particularly for making
salted shrimp paste, called “Shrimp paste electro-
pneumatic pounding machine”. Moreover, the machine
can also be used to other similar condiments. This
machine runs using air pressure by means of electro-
pneumatic system, and its other parts are innovatively
designed based on the related prior arts.

SCOPE & LIMITATION
The study focuses on design, fabrication and evaluation of
machine’s usability, functionality and efficiency including
time and product consistency compared to the conventional
pounding method.
Shrimp Paste Electro-Pneumatic Pounding Machine run by
means of electro-pneumatic system. Double acting pneumatic
actuator to be use for this pounding machine has a capacity
raging up to 1 MPA which has enough capacity to hold high
pressure that can produce sufficient power for mashing raw
ingredients, while the reciprocating speed of its pestle can be
regulated depending on the air pressure being supplied and set
ups of the control switches and regulators. In addition, this
shrimp paste pounding machine can accommodate load with
the maximum volume of 690 in3 per batch.
DESIGN CRITERIA
Frame Structure
Shrimp Paste Electro-Pneumatic Pounding Machine comprised
of the base plate, columns, lower beam and the upper beam. The
base was made of mild steel material with the thickness of 3/8” x
32”W x 36”L. On the base, the columns were bolted through the
use of 3/8”x 6”x 6” mild steel flanges where rubber dumpers held
below. The B.I. pipe columns with Ø 2 ½”, (schd.40) stand upright
in the same distance with the height of 50”. The Upper beam made
of 4” mild steel C-bar was attached on the top of the columns. It is
used to support the upper end cap of the pneumatic actuator. In
between of the end cap and upper beam flange, the rubber dumper
was held in order to absorb vibrations and shocks occurred during
pounding process. The 4” mild steel lower beam was mounted on
the middle portion of the columns that used to carry the pneumatic
actuator. Beneath, the scraping mechanism attached on the lower
beam so that it can move and rotate a freely.
DESIGN CRITERIA
Pounding System and Mechanisms
The pounding machine runs by means of electro-pneumatic
system wherein pressurized air employed through the help of
electrical powered controls, accessories and air compressor. The
double-acting pneumatic actuator has a maximum range of 1 MPa
that can handle enough pressure over the desired force to be applied
on a certain work. Its internal chamber measured with 80mm bore,
and its linear shaft travels ranging up to 300 mm. On the actuator
shaft end, the pestle cap was mounted where the wooden pestle
attached.
The tapered round wooden pestle aligned on the centre point of
the wooden mortar measuring Ø 100mm by 350mm in length. The
wooden mortar placed on the forepart of the two front columns,
aligning on the pestle head. The cup-shape inner core of the of the
mortar measured with the diameter of 300mm, 230mm in depth and
a volume of 690 cubic inch.

Scraping Mechanism

The Scarping Mechanism composed of a plow-shape


paddle mounted on the stirring rod which connected on the
bearing hub. On the opposite side of the stirring rod, the
stirring handle attached for scraping action.
