SANDWICHES
METHODS AND TECHNIQUES IN MAKING
SANDWICHES

1. Garnishing- to add
decorative or savory touches
to food or drink. Garnishing
includes sauces cut or
sculptured like tomato,
cucumber and etc.
2. Spreading- this is
filling out the layer
of bread with a
spreading mixture.
Techniques in spreading include the
following:
a. Use a small spatula, a table knife, or a rubber scraper
to spread the filling thinly and uniformly on the
bread.

b. To spread filling, start from one end of the allowance


of at least half centimeters out.
c. Spread just enough thickness of the filling to savor its flavor in
the sandwich.
d. Three-layered sandwiches are spread with fillings on the two
inside layers.
e. To make the sandwich neat and clean on edges, trim the brown
edge of bread with a bread knife.
3. Piping- a technique
in applying the filling
or garnishing in bread
with the use of a
piping tool.
4. Portioning- this
technique involves
cutting sandwiches into
exact sizes.
To apportion equally:

a. Use a sharp cutting knife and a hardwood block on


where to make and cut the sandwich.
b. Use a measuring gauge to determine thickness,
length, and width or the sandwich.
c. Keep sandwich in place while cutting.
5. Cutting- this
technique requires the
use of a sharp bread
knife.
6. Molding- this
techniques involves

Equipment for Presenting Sandwiches
1. Bowls and Baskets – these come in different sizes and shapes.
• Some are made of glass, ceramics, metals, wood, and indigenous
materials.
2. Paper Plates – they come in variety of sizes and
shapes, design, colors, and textures. These are paper
plates lined with wax and others lined with foil.
3. Plates and Platters – plates are usually round in
shape, although the square and rectangular ones are
becoming popular. Platters, on the other hand, are
becoming in shape and are usually bigger than
plates.
4. Trays – these are round, oval, or rectangular trays that are either made of
metal, glass, wood, or indigenous materials like bamboo, rattan, and buri.
Trays are efficient containers for breads and sandwiches because they
accommodate a greater number of individual products.
5. Indigenous Containers – these include locally
available ones like coconut shells, banana leaves, corn
husks, coconut leaves, and others.
6. Pedestal and Cake Keepers – pedestals can convert an
arrangement of sandwiches to an immediate showstopper.
Elevating a baked product is a surefire way to catch attention
and emphasizes every detail of the product.
7. Ethnic Dishware – these are authentic wares whose
design depicts the culture and history of a people or
country. For instance, what makes a Chinese bowl
different from a Japanese bowl, or a French dishware
from an Italian ware.
8. Custom Display – if you want to be really crafty, you
can build a custom display that fits your theme. For
instance, you can create a scenery using cut sandwiches
of different shapes and colors.
Guidelines in Presenting, Plating and Serving Sandwiches

• Choose the appropriate container for the product.


• Create transitions between a product and the plate
that is smooth, minimal or highlighted.
• Select plates or platters with designs around the
rim instead of the center.
• Arrange shape combination of cut sandwiches on
the plate to create a sculptural landscape.

• For buffet, arrange the sandwiches or individual


plates or in paper plates arranged on trays.

• Wrap individual sandwiches or breads in


parchment paper, origami paper, or gift wrap.
Storing Sandwiches
1. Wrap your sandwiches properly.

2. Sandwiches that are arranged in trays can maintain their


freshness by covering them in clean kitchen towel or
cloth.

3. Generally, soft-crusted bread and rolls should remain in


their moister and vapor-proof wrappers to avoid drying.
