Japanese Sake
What is Sake
The national beverage of Japan, sake, is a fermented rice
beverage — typically referred to as a rice wine

Fine sakes are aged for a year or more, and most variations
have an alcohol by volume content of between 15% and 20%
alcohol. (Strong undiluted sake, called Genshu, might have an
ABV of 20% plus.)

Origins?
The exact origin of sake is unclear because it predates recorded
history, but the earliest known production of the drink took
place in China roughly around 500 BC

chilled (45 F = 7 C)
Ishikawa Brewery ( 石川酒造 )

- Ishikawa brewery is a 120-year-old sake and beer


brewery producing Sake “Tamajiman” and craft beers
Tama no Megumi and Tokyo Blues.
- The entire complex consists of a historical beer
museum, a sake shop, an Italian restaurant, and an
onigiri (rice ball) restaurant
- Visit the museum inside of the Brewery, Seeing the
history of the Ishikawa family and how they have
brewed their sake since the 1880’s
- two gigantic 400-year-old zelkova trees rest on the
property, Representing the God of Rice and the
Goddess of Water, these two are necessary to make
sake.

Zogura. Owned by the same family. So a tour that
begins in the brewery, ends with a large hefty
Tamura Shuzojo Sake Brewery ( 田村酒造 )

- In quest of its family motto “brew with love, sell with


love.”
- The brewery is in a small neighborhood with no
crowds, no skyscrapers, and no hustle & bustle of the
city
- This family owned brewery is on its 16th generation
of family members working under the same roof.
- Visiting in mid summer. Stop by the Yakuma Shrine
Festival. These portable shrines are built by multiple
business’ and families, before paraded down the road
and judged by all

sample the seasonal sake choice.
Sawanoi - Ozawa brewery ( 小澤酒造 )

- Established in 1702 with over 300 years of history, Ozawa Sake Brewery is the oldest sake brewery in Tokyo.
- There are spectacular views of mountains and the Mitake valley in Okutama as well as sake breweries, restaurants,
shops, art museums, allowing visitors to enjoy a full day here.
- A twenty minute walk away is the beautiful Mitake Gorge, with wonderful views in late autumn.
