Did you know that lumpiang shanghai did not really come from
Shanghai, China? According to Cooking Power by Teacher Brenda,
the term lumpia derives from Hokkien lunpia which is an alternate
term for popiah. Chinese immigrants had brought the recipes, both
fried and fresh versions, from the Fujian province of China to
Southeast Asia and became popular where they settled in Indonesia
and the Philippines. This food had gotten popular in the Netherlands,
too, and was called loempia.
Although the Chinese had introduced this finger food to us, our
Filipino ancestors created their own versions of lumpia. One variety is
called lumpiang shanghai. Manilaspoon.com explained that
“shanghai” refers to the smaller but meatier variety of lumpia.
Before any celebration, busy housewives would prepare these ahead
of time and freeze it. Why? This is because lumpiang shanghai is easy
to make. Let me teach you how to do it.
