• Food Processing

a food product into another form (as in
making preserves from fruit), and
preservation and packaging techniques

• Sugar helps preserve the color, texture and
flavour of the food. The sugar in jams and
jellies helps the gel to form, and increases the
flavour. When large amounts of sugar are used
in a recipe, the sugar also acts as
a preservative by inhibiting microbial activity;
thus, recipes should not be modified or
adapted.
The most important among these are that
added sugar in foods acts as a:
• Sweetener
• Preservative
• Texture modifier
• Fermentation substrate
• Flavouring and colouring agent
• Bulking agent
Sugar Concentration
• Sugar has a very long history in food
preparation
Marmalades, syrupy fruit desserts,
candied fruits and other delicacies
were born out of the historical need to
preserve fresh produce. The
high sugar content prevents microbial
growth and spoilage by increasing the
osmotic pressure, which limits
microbial growth and makes
these foods last longer

Raw Materials
• A raw material, also known as a
feedstock, unprocessed material, or
primary commodity, is a basic
material that is used to produce
goods, finished products, energy, or
intermediate materials that are
feedstock for future finished products
Raw Material Specifications
• The name of the product and the
supplier's item number.
• Components or composition of
the material.
• The presence of regulated or customer-
recognized food allergens.
• Organoleptic information (appearance,
flavour, and aroma).
• Pertinent physical, chemical, and
microbiological information
• Examples of primary raw
materials include eggs, beef, seafood,
fruit and vegetables.
• A description of the material, including
biological, chemical and physical
characteristics. Composition of
the material, including additives and
processing aid.
EXAMPLES OF SUGAR CONCENTRATED
Sugar Concentration
• The concentration of sugar in sugar preserved
products must be 68 percent or more, which
does not allow microorganisms to grow. Lower
concentrations may be effective but for short
duration unless the foods contain acid or they
are refrigerate
Food Processing
• Food processing is any method used to turn
fresh foods into food products. This can
involve one or a combination of the following:
washing, chopping, pasteurizing, freezing,
fermenting, packaging and many more

Homogenization — followed by emulsification — involves
coaxing two otherwise immiscible liquids into mixing to
create a new, often creamy, liquid. Fortified milk, for
example, consists of homogenized milk containing dissolved
solutes, such as proteins and minerals; and lipids in the
form of milk fat.
•  Pasteurization- Pasteurization involves heating liquids at
high temperatures for short amounts of time.
Pasteurization kills harmful microbes in milk without
affecting the taste or nutritional value

• Breads are rich in complex carbohydrates.
Carbohydrates are an important part of our
diet as they provide us with energy. Our bread
contains various B vitamins, including Thiamin
(Vitamin B1) and Niacin (Vitamin B3) which
are essential for releasing energy from food.
