DEFINITION OF FOOD HANDLING
 The act and process of the creation, preparation,
transport, storage, packaging, sale, service or delivery of
food.
 Any aspect of the operations in the preparation,
transport, storage, packaging, wrapping, exposure for
sale, service, or delivery of food (Medicine Dictionary)
 It includes the making, manufacturing, producing,
collecting, extracting, processing, storing, transporting,
delivering, preparing, treating, preserving, packing,
cooking, thawing, serving and displaying of food.(MUI)
FOOD HANDLING ACCORDING TO
MS1500:2009
 All processed halal food shall meet the following
requirements:
 Food or its ingredients shall not be processed using any
components or products of animals that are non-halal by
Shariah law or of hala food any components or products
of animals that are not slaughtered.

 Food shall not be processed using anything in any
quantity that is decreed as Najs by Shariah Law.
 Processed food or its ingredients shall be safe for
consumption, non-poisonous, non-intoxicating or non-
hazardous to health.

equipment and facilities that are free from contamination
with Najs.

DEFINITION OF FOOD HANDLING
QUALITY IN ISLAM
 Food handling quality is defined as a standard or
procedures that measure the quality of food safety that
has been stated in Al-Quran and Al-Sunnah.
 Hygiene has been given much emphasis in the concept of
halal and it includes various aspects of personal body
cleanliness, clothing, equipment and the working
premises for processing or manufacturing of foods,
drinks and products.

 In order to ensure the safety of consumers, the producers
should take necessary steps to comply with Good
Manufacturing Practice (GMP) and Good Hygiene
Practices (GHP).
 In Malaysia, the provisions of the legislation, policies
and standards outlined is based on the principles of halal
and halal concept in the Al-Quran and Al-Sunnah.
 Islam is strongly emphasis on cleanliness and purity,
spiritually, morally and physically including food and
drink.
ISLAMIC ETHICS IN A WORKPLACE
 Work is considered necessary to establish an equilibrium
between one’s individuality and social life. The Qur’an
instructs Muslims to persistently work whenever and
wherever possible: “Disperse through the land and seek
of the bounty of God” (62:10).
