• 60ml cold water, plus a 30ml for a looser
consistency
• 1 small garlic clove peeled and crushed 1 lemon,
juiced then ½ zested
• 3 tbsp tahini
• 1 tbsp olive oil, to garnish (optional) mixed
crudités and toasted pitta bread, to serve

a Levantine salad made mostly of finely chopped
parsley, with tomatoes, mint, onion, soaked

• ¾ cup plain yogurt
• ¼ cup lemon juice
• ¼ cup vegetable oil 4 cloves garlic, minced
• 2 teaspoons tomato paste 1 ½ teaspoons salt
• 1 teaspoon dried oregano
• ¼ teaspoon ground black pepper
• ¼ teaspoon ground allspice
• ¼ teaspoon ground cinnamon
