WHAT IS LOSS ASSESSMENT?

Postharvest loss includes the food loss across the food supply
chain from harvesting of crop until its consumption.
WHAT IS QUALITY
EVALUATION ?

Quality evaluation of post harvest refers to the assessment of the physical, chemical, and sensory properties of crops
after they have been harvested. This evaluation helps to determine the quality of the produce and its suitability for
consumption, processing, and storage. The evaluation typically involves the measurement of parameters such as
appearance, texture, aroma, flavor, nutritional content, and microbial activity. It is important to conduct quality
evaluation of post harvest to ensure that the produce is of high quality and safe for consumption, and to identify any
defects or problems that may affect its market value or shelf life.

TYPES OF LOSSES

Physical losses - This type of loss occurs when there is a reduction in


quantity or quality of the product due to physical damage , spoilage,
or shrinkage during handling , storage , or transportation .
Economic losses - This type of loss occurs when there is a reduction in
the market value of the product due to factors such as over supply ,
market fluctuations , or changes in consumer preferences .

Nutritional losses - This type of loss occurs when there is a reduction


in the nutritional value of the product due to improper handling ,
storage , or processing .
Social and environmental losses - This type of loss occurs when there is a
negative impact on society or the environment due to post -harvest losses.
For example , food waste contributes to greenhouse gas emissions and
other environmental problems .
Methods of losses Assessment
Physical Quantification - This method involves measuring the physica
loss of the product , such as weight or volume , during handling ,
storage , or transportation .
Economic Analysis - This method involves analyzing the market
value of the product and estimating the economic losses due to
factors such as over supply , market fluctuations , or changes in
consumer preferences .
Nutritional Analysis- This method involves analyzing the nutritional
value of the product before and after processing or storage to
determine the extent of nutrional losses .

Environmental Impact Assessment - This method involves


assessing the environmental impact of post - harvest losses ,
such ad greenhouse gas emissions , and identifying ways to
reduce the impact .

Social Impact Assessment - This method invloves assessing the


social impact of post harvest losses, such as the effect on food .
QUALITY EVALUATION
METHODS
Quality evaluation includes measurements of colour, texture, flavour,
and nutritional value.

Methods for measuring these quality attributes can be destructive or


nondestructive. Colour can be measured with a colorimeter.
Texture can be assessed by several instrument using punture ,
deformation , or shearing methods .
Flavour is usually judged by sensory taste panels , and volatile
aroma compounds are analysed by gas chromatography.
Nutritional values are determined by chemical analysis , gas
chromatography , or high performance liquid chromatography.

Internal defects can be detected nondestructively by a light


transmittance method or nuclear magnetic resonance imaging
technique .
Amelioration Methods of various Post harvest
problem

Spoilage - Proper storage and handling technique can help prevent


spoilage . This includes maintaining proper temperatures, humidity
levels and ventilation . Additionally , packaging and labeling
practices can help identify and remove spoiled products before they
reach consumers .
Physical damage - Careful handling and transportation can help
prevent physical damage to crops . This includes using appropriate
packaging materials and transport vehicles that are designed to protect
the produce from damage .

Pest and Diseases - Proper sanitation and hygiene practices can


help prevent pests and diseases from spreading this includes
cleaning and disinfecting equipment and storage facilities , as
well as properly disposing of any contaminated waste .
