CLIMACTERIC FRUITS
The fruits which show dramatic
increase in the rate of respiration
during ripening and respond to
ethylene for ripening

IMPORTANCE OF UNDERSTANDING THE
BEHAVIOUR OF CLIMACTERIC FRUIT
HARVESTING AND POST HARVEST
MANAGEMENT : due to understanding the behaviour
of climacteric fruit like its physiological process,
repiration rate colour and aroma change, determining
the harvesting and post harvest handling
RIPENING CONTROL : for delay or accelerate the
ripening process leads to extension of shelf life
QUALITY ASSURANCE : due to better understanding
its leads to better handling, storage and transportation
practices and hence increase the quality of the product
CONSUMER SATISFACTION
ECONOMIC CONSIDERATION: better
understanding leads to better plan for cultivation,
minimizing the loss and increasing the marketable
yield
SUSTAINABILITY: means optimum utization of the
available resource and increases the fruit production

HOW ETHYLENE IS FORM ?
ENVIRONMENTAL FACTOR INFLUENCING
THE ETHYLENE PRODUCTION
ENVIRONMENTAL FACTOR:
1. TEMPERATURE: ethylene prodution generally
increases with increase in temperature
2. LIGHT: Both intensity and duration of light can
impact ethylene production
3. O2 LEVEL: Production is enhanced in low oxygen
environment
4. HORMONAL REGULATION: High level of auxin
and low level of cytokinin increases ethylene
production
5. WOUNDING AND STRESS: It also increases the
ethylene production
GENETIC FACTOR: Different species and cultivar
may have varying level of ethylene production due to
their genetic diffrence
RIPENING PHASES
PRE CLIMACTERIC STAGE: Here fruit is green and
having low sugar content (not yet ready to be
consumed)
CLIMACTERIC STAGE: Here fruit reaches its peak
ripeness. The fruits soften and changes its colour and
aroma\flavour.
This is the stage at which the fruit is harvested
and consumed.
Over-ripe Stage: Here the fruit becomes excessively
soft and may develop dark spots, flavour\aroma get
affected.
