Potato salad with lemon and mustard mayonnaise

Cook the washed potatoes with their skin on in plenty of water, depending on their size, for about 30 minutes; it is best to check the point by pricking with a skewer in the thickest part. If it goes in
easily, they are ready and we can remove them.

While we cook the four eggs separately in boiling water with a handful of salt. Cook for 11 minutes, remove and refresh with ice water. Peel and reserve. We make the sauce by mixing the
mayonnaise with the yolk, the lemon zest, the mustard and the milk. Season and remove. We reserve in the fridge.

Peel the potatoes when they do not burn and semi-shred them with a fork, leaving irregular pieces. Season with salt and pepper, add the chopped hard-boiled eggs (reserve one yolk) with the sauce.
When serving, grate the reserved hard-boiled egg yolk and garnish with chives.
