Introduction -
Cheesecake
Cheesecake is a dessert made with a soft fresh cheese, eggs, and
sugar. It may have a crust or base made from crushed cookies,
graham crackers, pastry, or sometimes sponge cake. Cheesecake
may be baked or unbaked, and is usually refrigerated.
Ingredients
Crust:
6 tablespoons unsalted butter
1 1/2 cups graham cracker crumbs
2 tablespoons granulated sugar
Pinch fine salt

Filling:
2 pounds cream cheese, at room temperature
1 1/4 cups granulated sugar
1 tablespoon vanilla paste or extract
1 teaspoon finely grated lemon zest

Garnish:
Mangoes cut into cubes
1/2 cup confectioners' sugar
1/4 teaspoon vanilla paste or extract
Procedure:
1: For the crust: Melt the butter, covered in the microwave, in a medium microwave-safe bowl, or a saucepan.
Brush a 9-inch springform pan with some of the butter. Stir the remaining butter together with the crumbs,
sugar, and salt. Press the crumb mixture over the bottom of the pan, taking care to get the crust evenly into the
edges.

2: For the filling: Put the granulated sugar and cream cheese in a bowl. Then, mix it using rubber spatula. Set
aside, and get another bowl. Then put the chilled all purpose cream and mix it using hand mixer in a low speed
until it doubles the size. Combine the mixed cream cheese with the all purpose cream.

3: Put the mixture on the top of the crust. Chilled for 30-40 minutes.

4: Slice the mango into cubes and add a little granulated sugar then mix.

5: Put the mango toppings on top of the cheesecake
