Sweet Taste &
Metabolism

03
Sweet Taste

• Binding of a molecule to a
receptor protein lead to
releasing a signaling.

• Adjoining sensory neuron

receive that signaling and
send impulses to the brain.

• In the brain, these signals

derived cause the actual
sensation of sweetness.

Sweet Taste

T1r3 appears to be the

primary receptor for
sweet substances. T1r3
has a well-defined
"pocket" where smaller
molecules may enter
and perhaps bind.
Depending on a good fit
of molecular shape and
the presence of groups
that interact chemically
make stabilize binding.
Sweet Taste

Sucrose binds fairly well to

T1r3 and hence leads to a
sweet sensation in the brain.

Sucralose binds to T1r3 much

more strongly than does
sucrose, owing to the differing
structures of the two
molecules. Sucralose is ~ 600
times as sweet as the same
amount of sucrose.

Advantage &
Disadvantage

04
Advantages

Sucralose is an artificial
sweetener that has no calories and
can help individuals lose weight.

You can add sucralose to recipes

and create a low calorie alternative
that still tastes great.
Advantages
Products containing sucralose
provide a sweet taste and are often
low or lower in carbohydrates,
which is important for diabetes.

Sucralose does not raise blood sugar

levels or otherwise affect blood
glucose control.
Advantages

European Food Safety Authority (EFSA)

claims that sucralose has no effect on
tooth decay.

Sucralose is commonly found in oral

health products, such as chewing gum.
Disadvantages

Animal studies suggest that there

might be a link between sucralose and
a reduction in beneficial gut bacteria,
with concerns this could result in
health issues.

Potential toxicity from habitual

sucralose ingestion. Historical in vitro
genotoxicity tests found that sucralose
was weakly mutagenic in a mouse
lymphoma mutation assay.
Disadvantages

Research in 2019 revealed that when

sucralose is heated to ≥248°F (120°C)
it may dechlorinate and decompose
into compounds that are harmful
enough to risk consumer health.

SUMMARY
Sucralose is an artificial sweetener, 600 times
sweeter than sucrose and does not provide any

05
calories.

Although sucralose is used globally in reduced-

calorie and diet foods and beverages, it has
raised concerns such as potential toxicity from
habitual sucralose ingestion,etc.

It is important to comply with the correct

dosage and consult a nutritionist when using
sucralose in the diet.
