FACTS ABOUT MAIN COURSE SALAD
1. The term “salad” comes from the Latin word for salt (“sal” ). In Roman times, salads consisted
largely of salted vegetables glazed with an oil and vinegar dressing. Thus the salt. The French
eventually coined the term “salade” which is where we got it
2. Main course salads are a great way of eating. Packed with veggies, proteins, and flavourful
ingredients, they’ll keep you satisfied for hours. So forget relegating salad to a side dish and take a

ingredients, such as meat, poultry, seafood, eggs, legumes, or cheese. It should also contain a variety

The 18th century version of the chef’s salad was referred to as
“salmagundi”. At the time, this salad consisted of chopped meat,
anchovies, eggs, onions, and oil. When making new salmagundi recipes, it
was the tradition to use whatever was on hand at the moment, so each
salad was truly a personalized dish. This salad was uniquely altered by a
chef at the Ritz Carleton in New York City during the 1940s when he added
smoked ox tongue and watercress to the salad. No thank you.
Both the name salmagundi and salad derive from “sal” meaning salt in
Latin, which was a common ingredient in dressings. Back in those days,
ancient Greeks and Romans used vinegar, oil, and herbs, which is why the
Romans referred to salads as “herba salata”, which translates directly to
‘salted herb’.

05 Nigerian Salad
The classic Nigerian Salad recipe is a very lively salad.
It’s colorful, nutrient-dense, very filling and it’s very
tasty. I need to add that it’s versatile enough to serve in
smaller portions as an appetizer, or as one hearty
bowlful main dish and it’s very easy to make. It literally
an anything-goes type of food
2 large carrots
2 cups lettuce Shredded
2 cups cabbage Shredded
2 tomatoes ripe and hard
1 cucumber medium size
1 cup pasta or boiled potatoes
2 large boiled eggs cut into quarters
8 ounces baked Beans
8 ounces sweet corn
8 tablespoons Heinz salad cream
NIGERIAN SALAD
The central ingredients are
Lettuce and Cabbage but it's
surrounded by Tomato, pasta,
Eggs, Cucumber, Baked Beans
and sweet corn. All these
ingredients make this salad
economical enough to entertain
a crowd and like with most
salads, it's also quite flexible
