• There are several kinds of stock, vegetable stock, fish
stock, light and dark chicken stock, veal stock, and you
can do specialized stocks. In the end there are a variety
of stocks out there, some associated with a particular
cuisine, like dashi a fish and kelp stock, and some are
universal, like veal stock.

• Examples. Mirror glaze on an entremet. Doughnut glaze is


made from a simple mixture of confectioner's sugar and
water, which is then poured over the doughnuts. Some
pastries have a coating of egg whites brushed-on.

• A glace or glaze is the reduction of a stock
by 75% or more to a syrup consistency.
These reductions can be used for sauces or
as a natural soup base.
