PART II. HUE CUISINE
Hue cuisine has a tasty and rich flavor. Hue
people consider food as the philosophy of life
with all flavors from salty, sweet, fleshy to sour,
acrid, bitter and spicy but any taste is always
savory.

Whether the dishes are delicious or simple, they


make people feel attached to that unforgettable
taste. The dishes seems like made by the skillful
hands of local women, it has been blown into
the soul and a little bit of the spirituality from
Hue.
- Coming to Hue, visitors will enjoy three types of cuisine:
royal cuisine, folk cuisine and vegetarian dishes.
Referring to Hue specialties, it is definitely impossible to ignore the famous Hue
beef noodle soup with a rich, mild spicy flavor typical of the Central people that
cannot be found anywhere else.

The most rustic and unforgettable dish is mussel rice. It is a simple dish, full of
country flavor made from a product located in the heart of the river of taste of
Hue.
Banh Nam and Banh Bot Loc can be considered both snacks and main dishes. The
appearance of the Banh Nam is quite similar to Banh Bot Loc because both are wrapped in
banana leaves with the filling has meat and minced shrimp.

However, unlike the transparent color that sees through the filling of Banh Bot Loc, Banh
Nam has a notable white color of rice flour with the inside layer spread evenly on the top
which looks more attractive.

Banh Beo is a popular dish from Hue. The dough is softer and smoother, placed in a small
bowl, sprinkled with fried onions, shredded dried shrimp and pork lah. These can be served
with sweet and sour fish sauce, add a little green chilies.
