It is the process of preparing food for


future use by preventing its spoilage.
FOOD PROCESSING

It is the application of techniques to


protect or minimize undesirable
changes in food.
FOOD PRESERVATION
It is the process of preparing food to prevent or slow
down its spoilage. It aims to extend its shelf life so
that it can be consumed at a later time. All methods
used in food preservation and processing are based
upon the principle of preventing the spoilage of food.

It is the undesirable change in food


that has to be prevented or minimized
by food preservation.

• The typical microorganisms that cause food


spoilage are bacteria (e.g. lactobacillus),
yeasts (saccharomyces).
Enzymes are substances that cause fruits to ripen. Food items, particularly
fruits and vegetables, have enzymes that are active even after harvest,
causing them to overripe.
HERE ARE SOME OF THE CAUSES OF SPOILAGE :

• Chemical reactions in food caused by light and oxygen.


Oxidation, or the reaction of food containing fat or
pigments when exposed to oxygen, produces undesirable
changes and flavor in food. An examples of this is the
rancidity or the unpleasant taste and smell of oily
substances.
HERE ARE SOME OF THE CAUSES OF SPOILAGE :

• Pests such as insects, worms, flies or rodents


cause damage in food and render it unfit for
human consumption. The bruises and cuts caused
by these pests preserve as pathways for
microorganisms to reach the inner tissues of food.

are problems that can be solved by food preservation.
Food preservation assures the consumer of a supply of
food items that are out of season and prevents that
waste of perishable goods that are in season.

times of the year can be made available all year
round. Out of season food items are provided to
consumer and are readily found when needed.

• Farmers will be encouraged to plant and raise more
crops, thus stimulating agricultural development.

to produce crops such as corn, peanuts, root crops
etc., which are needed resources for their production.

income. When harvest is abundant and food
supply is more than enough for the family,
products can be preserved and sold to the market.
