 These are the business premises that
provide facilities of food & beverages
and accommodation.
 Residential may be classified as Hotels,
Motels, Resorts, Floatels, Guest House,
Lodges ,Circuit House, Youth Hostel.
HOTELS
 Hotels are business
premises which provides
the basic facility of food
& beverage as well as
accommodation.
 An establishment cannot
be called as hotel if any
of the 2 factors are
missing.
 The facilities provided
by the hotel may vary
from 2 Star to 5 Star.
MOTEL
• These are the hotels located
at the highway sides which
cater mainly to the travelers .
• These are not as expensive
as luxury or business hotels.
• They provide the facilities
like vehicle parking ,garage
facilities ,refueling along with
food & beverage &
accommodation.
• The guest may not stay for
long as compared to resort or
business hotel.
 RESORTS
These are located faraway from
the city mainly at seaside & hill
stations.

 People visit these places mainly


during vacation.

 The stay of guest is much longer


than the stay of guest in normal
luxury hotels.

 These hotels provide the facility of


kitchen in the room.

 They may provide adventure


sports facilities depending upon
the location.
FLOATELS

 They are generally the


floating boat.

 They provide the facility


of food & beverage &
accommodation.

 Depending upon the size


of floatels the facilities
may vary.
GUEST
HOUSE
 These provide the
minimum facility of
food & beverage along
with accommodation.

 The standard of
accommodation is not
as good as hotels &
resorts .
LODGES
 These establishment
only provides the
facility of
accommodation.
 Here the expenses are
much moderate as
compared to hotels.
 These are located near
the railway station &
bus stand.
CIRCUIT
HOUSE
 These are like guest
house but the standard
is comparatively
better.
 This place is generally
owned by state
government & used by
politicians ,governmen
t officials.
 Food & beverage is
not very elaborate but
service is better than
YOUTH
HOSTEL
 These are much cheaper
than Hotels & Motels .

 They provide the basic


necessity of
accommodation & food &
beverage service.

 Best examples are

NON-RESIDENTIAL

 These are the business premises that


provide the facility of only food & beverage
but no accommodation .

 Non- Residential may be classified as


Restaurant ,Bar, Fast food outlet,
Discotheque ,Pastry shop, Vendors, Kiosks.

 They are generally
present at railway
platforms & main road
side .

beverage.

 These facility is
provided mainly to the
moving people .
KIOSKS
 Independent food

to as kiosks .

Railway catering are further divided into 2 areas
i.e
 Terminal catering .
 In transit catering .

 Terminal catering : Catering at railway terminals


usually comprises of Restaurants ,Fast food
outlet, takeaway units , vending machine
dispensing hot or cold beverages etc.
 In transit catering : It provides 3 kinds of
catering service in the train.
 Restaurant Car Service : Restaurant inside the
train which provides the seating arrangement
for the Passengers to have their breakfast ,lunch
& dinner.
 Buffet Car Service : It provides self service
operation where the passengers has to go to the
buffet car to buy the refreshments from the
counter .
 Trolley Service : It is the trolley service where
the snacks & drinks are delivered to the
customer’s at their seat .

 A simple food truck carrying snacks &


beverages which have the provisions for
heating & refrigeration .
 This service provides the facility of food &
Beverage to the traveling public .
 This service is open for 24 hrs .

Air catering has increased & developed
considerably .Due to the limited space
precooked or frozen food is loaded in to the
aircraft galley & later heated in specially
fabricated ovens . Air catering falls into 2
main areas i.e
 Terminal catering.
 In flight catering .
 TerminalCatering : It usually consists of food &
beverage outlet at air terminals such as
Restaurant , Vending Machine & licensed bar .

 InFlight Catering : Service & food varies


considerably with the class of travel. For
economy travelers the food is already portioned
in disposable packs . For First class travelers the
food is portioned in bone china crockery .

Marine Catering
 Marine catering includes catering for passengers
as well as the crew on board .
 Luxury cruise liners have high standard &
equipped facilities like restaurant , swimming
pool ,golf course , discotheque , casino etc on
board .
 Menu served are exclusive & quite elaborate to
provide ample amt of choice.
 The service standard is comparatively high as
class hotel in the world .

 The price charged to the students keeping
the profit in mind .
 Service style can vary depending upon the
number of students .
 Usually buffet counters are placed .
 Institutional catering is generally run by the
institute itself or by the students

camps where no money is charged to the
military personnel .
 But in certain cases they are required to
pay a very nominal amt towards the food
cost .
 During wartime the soldiers are not
supposed to pay anything towards food .

 Outdoor catering means catering to a large
no. of people at a venue of their choice .
 The type of food & setup depends entirely
on the price agreed on .

 Departmental Store Catering :
 This type of catering are involved in large
departmental stores to provide food &
beverage to their customers as a part of
their relating concept .
 It is inconvenient & time consuming for
customer to take break from shopping &
have some refreshment at different
location .
 Club Catering :
 This refers to provision of food &
beverage to a restricted clients or
members .
 Clubs like golf club, cricket club , turf
club etc .
