What is soup and consomme’s?
Consomme'( pronounced con-som-AY) is a strong rich flavorful soup made by concentrating
and clarifying stock. It is frequently served with a simple garnish of vegetables cut in brunoise
or julienne.
Beef or real consomme is made from brown stock and has a rich, amber color produced by
roasting the bones to make stock
What is cocktail?
Cocktail - dish consisting of small pieces of food typically scrued cold of the beginning of a
meals as an appetizer.
An alcoholic drink consisting of a spirit or several spirits mixed with other ingredients.
