GINGER
When ginger was introduced into England it became known as 'gingifer' and it is from this word that the name we call it today evolved. It is an herb. The rhizome is used as a spice and also as a medicine. It can be used fresh, dried and powdered, or as a juice or oil. More than 5000 years ago the ancient Chinese and Indians looked upon Ginger as the 'universal medicine'. An active agent against enterotoxigenic Escherichia coliheat-labile enterotoxin-induced diarrhea.

Key Enzyme of Ginger


Zingibain
-helps to break down proteins in your diet and improve digestion. Since ginger is high in proteolytic enzymes, it helps to prevent indigestion by neutralizing stomach acids and promoting the production of digestive juices.

Medicinal and other uses of ginger


Fresh ginger is used for treating acute bacterial dysentery, baldness, malaria, poisonous snake bites, rheumatism, migraine headache, and toothaches. Dried ginger is used for chest pain, low back pain, and stomach pain. Some people pour the fresh juice on their skin to treat burns. The oil made from ginger is sometimes applied to the skin to relieve pain. In foods and beverages, ginger is used as a flavoring agent. In manufacturing, ginger is used as for fragrance in soaps and cosmetics.

How effective is it?


The effectiveness ratings for GINGER are as follows: Possibly effective for: Nausea and vomiting following surgery. Most clinical research shows that taking 1 gram of ginger one hour before surgery seems to reduce nausea and vomiting during the first 24 hours after surgery Dizziness. Taking ginger seems to reduce the symptoms of dizziness, including nausea. Preventing morning sickness Ginger seems to reduce nausea and vomiting in some pregnant women. But taking any herb or medication during pregnancy is a big decision.

How does it work?


Ginger contains chemicals that may reduce nausea and inflammation. Researchers believe the chemicals work primarily in the stomach and intestines, but they may also work in the brain and nervous system to control nausea.

PROBLEM OF THE STUDY


This study was conducted to answer the following problems:

1. Would bread be a more inviting medium of ginger for the general population? 2. Would it be efficient in spreading the health benefits of ginger to the public?

HYPOTHESIS OF THE STUDY

1. Based on the fact that bread is accepted in all parts of the world, especially here in the Philippines where Filipinos love their kape at pandesal, we can infer that if we want to introduce more ginger into the diets of people, bread will be a very effective medium. 2. In theory, extracting the properties of a given substance and transferring it into another medium should be easy. We may not be able to get the most of ginger but if given, the most optimal equipment it should be feasible, to say the least.

OBJECTIVES OF THE STUDY


A.) General Objectives: 1. This study aims to prove or disprove the notion that bread would be an inviting medium for people. 2. This study also aims to prove or disprove the notion that this medium would be an effective means of getting more ginger into the diets of more people. B.) Specific Objectives: 1. This study aims to find a way to introduce more ginger into the diet of the average man.

SIGNIFICANCE OF THE STUDY


Ginger has been known to provide a wide range of health benefits and medicinal uses but it is usually used only as an additive to help improve the flavor of the core ingredient in the dishes and recipes especially here in the Philippines. In fact, it has been observed that in the Philippines, it has seen a lot of folkloric use. People have used it as a repulsive, antirheumatic, antiseptics and digestive aids. It has also been compared to Aloe Vera a lot due to its cleansing properties which has made it extremely famous and also scientifically efficient for easing digestive problems.

SCOPE AND LIMITATIONS


We have decided to stay within the boundaries of producing the product ourselves, comparing it to conventional white bread, cost and crowd reception, nutritional impact and how gingers digestive benefits transcended into the final product once infused with ginger.

REVIEW OF RELATED LIRTERATURE


There have been interesting ginger-infused products that have shown some very promising results. One of which is known as simple Ginger Tea. Ginger Tea has been an old Chinese tradition that is normally used to treat digestive problems and according to colloquial belief, it seems to be very effective. Another ginger-infused object that shows promising results are Ginger Lozenges which dont show as powerful results as the tea yet has been known to soothe sore throats and simple tummy aches.

METHODS IN GINGER BREAD MAKING


Ginger is diced to small portions or boiled to form an extract. Two cups of water is added to an empty bowl. One and a half cups of sugar is added to bowl with water. The mixture is stirred until sugar is dissolve. Small portions or the ginger extract is added to the mixture. One half cup of instant active dry yeast is added and stirred until the mixture formed a thick substance. One pack of all-purpose flour with 2 tablespoons of salt is then added to the mixture. The mixture is stirred until a solid-like substance or dough is formed.

The dough is placed in flat surface with a non-stick paper. The dough is turned and kneaded while a small spoonful of flour is added until the dough becomes smooth, soft and non-sticky. The dough is rubbed with vegetable oil and placed in the oven preheated over two hundred degrees celsius The dough is left in the oven for thirty minutes. After 30 minutes, the dough is sliced and cooled down for serving.

CONCLUSION
In our pursuit to find a more effective means of getting more ginger into the average diet of an average everyday man, we found bread to be a great answer to that problem.

RECOMMENDATIONS

Due to the time constraint and lack of facilities that we experienced in our investigation, we strongly recommend that more research is put into the nutritional facts and the different applications that ginger may have on other products and bread, in particular. In our small-scale experiment, we found that this is a cost efficient way of making the food that we eat healthier but we lack the necessary evidence to prove that this would be a feasible and cheap way to fight hunger especially in places in the Philippines and whether or not it has a good fight in the industrial markets of the economy. The main goal of this investigation was to find a way to get more ginger into our bodies and we may have found an answer to that but this study doesnt say that it is the best way to do that. Different mediums of ginger have not yet been explored and it still has a lot of undiscovered potentials, so we recommend that more research be put into strengthening ginger-infused bread in a health-oriented perspective.
